CALGARY, AB – Oliver & Bonacini (O&B), a Canadian leader in fine dining, is set to open its first Western Canadian restaurant in Calgary at the iconic Hudson’s Bay building on Stephen Avenue. The Guild Restaurant
will feature the finest traditions of butchery, cookery and bar-keeping. Spanning two floors and featuring one of Calgary’s largest patios, The Guild is a nod to the guildhalls of the past, which served as meeting places for artists and merchants. Temporarily opening with a customized limited menu in time for the Calgary Stampede, The Guild will introduce its full, extensive menu on July 21, 2016.
The Guild’s culinary team will be helmed by Alberta-born Chef Ryan O’Flynn, winner of the prestigious Canadian Culinary Championships in 2015. Chef O’Flynn has cooked in Gordon Ramsay’s Michelin-starred Petrus in London, and was executive chef of London’s The Milestone Hotel, named “Best Hotel in the World” by Condé Nast during O’Flynn’s tenure.
With an emphasis on live-fire cooking, The Guild will specialize in local beef, game and fowl, prepared over mesquite fruitwood and charcoal grills – showcasing the best cuts of meat that Alberta has to offer. “Calgary has a well-established and savvy food scene, and we are excited to be part of such a strong and growing community,” says O’Flynn, Executive Chef, The Guild.
The Guild will also feature classic and tailored handcrafted cocktails, an extensive selection of Canadian
whisky, American bourbon, craft beers, and a robust wine program spanning old and new world varieties.
There will be several ways to experience The Guild, including a separate and unique bar space that will be revealed this fall.
The Guild creator, Oliver & Bonacini, has earned its reputation for high quality dining experiences through its extensive portfolio of unique concept restaurants, including iconic favorites Canoe, Jump and Auberge du Pommier. Partner and founder Michael Bonacini also appears on CTV’s Master Chef Canada.
To kick off Stampede season, The Guild will be serving $3 Caesars on July 8 to 10 from 11 a.m. to noon and will be featuring entertainment on its patio.

About Chef Ryan O’Flynn:
Chef Ryan O’Flynn’s culinary journey began in Edmonton, followed by several years working his way up the ranks of Alberta’s kitchens. In 2000, Chef O’Flynn moved overseas, where he later landed a Chef de Partie position at Gordon Ramsay’s Petrus, a two Michelin-starred modern French restaurant in London. At just 26 years old, he was appointed Head Chef of Le Galloise, Wales’ top restaurant. At 29, Ryan was named Executive Chef of The Milestone Hotel in London, which was voted “Best Hotel in the World” by Condé Nast Traveler during his tenure. Shortly after returning to Alberta in 2013, Chef Ryan accepted the position of Executive Chef of The Westin Edmonton, where he crafted creative and modern Canadian cuisine. In 2015, Chef Ryan took home top honours from the Canadian Culinary Championships, beating out top chefs from across the country. With over 20 years of culinary experience and an extensive international background, Chef Ryan is well poised to take the lead as Executive Chef of The Guild, bringing new heights of creativity, style and skill to its kitchen.
